Ingredients
- 250 g Shrimp (or prawns), ready to cook
- 0.5 tsp Salt
- 1 pinch cayenne pepper
- pepper (ground)
- 3 tbsp butter
- 2 tbsp dry vermouth
- 3 tbsp Lemon juice
- 1 tbsp finely chopped flat-leaf parsley
- 1 Avocado
- 1 small baguette
Instructions

Mix the shrimp in a bowl with salt, cayenne pepper and a little black pepper.

Heat the butter in a pan, quickly sauté the shrimp for 1–2 minutes, add vermouth and 1 tbsp lemon juice. Simmer everything over medium heat for 3–4 minutes, taste, stir in parsley, let cool slightly.

Peel the avocado, halve it and remove the pit. Cut each half twice lengthwise, then slice crosswise into thin rounds. Drizzle with lemon juice and season with salt and pepper. Combine shrimp with avocado.

Cut the baguette into ~10 cm wide pieces, slit them lengthwise, and fill with avocado and shrimp.
