Feta Vegetable Sandwich

Ingredients

  • 1 large red onion
  • 100 g cherry tomatoes
  • 2 beef tomatoes
  • 1 eggplant
  • Salt
  • 1 bundle arugula
  • olive oil
  • pepper (ground)
  • 4 sesame buns
  • 200 g feta

Instructions

    Peel the onion and slice into thin rings. Wash the tomatoes, remove the stems from the beef tomatoes and slice them as well. Wash, trim, and cut the eggplant into 1 cm thick slices; sprinkle with salt, let sit for about 20 minutes, then pat dry.

    Rinse the arugula, discard any wilted leaves, and spin dry.

    Preheat the grill.

    Place the vegetables in a greased aluminum grilling tray, season with salt and pepper, drizzle with olive oil, and lay on the hot grill. Grill until golden brown on all sides, turning occasionally.

    Halve the buns horizontally and toast them on the grill until golden brown as well.

    Crush the feta roughly and layer it with arugula and grilled vegetables onto the bottom halves of the buns. Tilt the bun tops and secure with a wooden skewer if desired.
