Shrimp and Tofu Skewers

Ingredients

  • 500 g shrimp (pre‑cooked, deveined and peeled)
  • 2 tbsp Lime juice
  • 1 tsp Honey
  • 1 tbsp curry powder
  • cayenne pepper to taste
  • 6 tbsp vegetable oil
  • 500 g Tofu
  • 2 tbsp freshly chopped herbs (e.g., thyme, rosemary, parsley)
  • 4 tbsp light soy sauce
  • salt to taste

Instructions

    Wash the shrimp, pat dry and place in a shallow bowl. Whisk lime juice with honey, curry, cayenne pepper and half of the oil; combine with the shrimp. Cover and let marinate in the refrigerator for about 30 minutes.

    Cube the tofu. Mix with the remaining oil, herbs and soy sauce, then refrigerate for about 20 minutes as well.

    Preheat the oven to 220 °C (425 °F) with both fan and top heating.

    Arrange shrimp and tofu on a baking sheet lined with parchment paper and bake in the oven for 8–10 minutes until cooked through.

    If desired, thread onto wooden skewers and serve in small bowls.
