Ingredients
- 2 Potatoes
- 2 carrots
- 1 onion
- 2 chicken breast fillets
- 4 large shrimp
- 120 g fresh pineapple (peeled and diced)
- 2 tbsp oil
- Salt
- ground pepper
- 2 tsp Curry powder
- 0.5 tsp cinnamon
- 2 tsp garam masala
- 400 ml Vegetable broth
- coriander leaves (for garnish)
- 150 g coconut milk

Peel, wash, and cut potatoes into bite-sized pieces. Peel and chop carrots. Peel and finely mince the onion.

Cube the chicken and sear in hot oil. Season with salt, pepper, and curry powder; set aside.

Sauté potatoes, carrots, and onion in the remaining fat while stirring. Salt and pepper to taste. Stir in the remaining spices, pour in broth and coconut milk, and simmer for about 8 minutes. Return chicken, simmer for another 5 minutes. Add shrimp and pineapple, cook together for 2-3 minutes, then adjust seasoning. Serve in bowls garnished with coriander leaves.
