Ingredients
- 1 tbsp oil
- Pepper
- 250 g large scampi (raw, shell removed)
- 1 bunch spring onions
- 250 g Galia melon flesh
- 1 Banana
- zest and juice of 1 lime
- Salt
- Cayenne pepper
- 1 tbsp chili sauce
- 6 sprigs Mint
- 120 g basmati rice
- small wooden skewers
Instructions

Mix oil and pepper in a bowl. Add the scampi and stir. Set aside briefly.

Clean, rinse, and finely chop the spring onions. Dice the melon into small cubes. Peel and dice the banana. Combine melon, banana, spring onions, lime zest and juice. Season with salt, cayenne pepper, and chili sauce.

Rinse the mint leaves, shake dry, finely chop the leaves and mix into the salsa.

Cook the rice according to package instructions in salted water. Soak the wooden skewers.

Thread the scampi onto the skewers and sear them in a hot non‑stick pan until cooked through. Serve with the salsa and rice.
