Shrimp and Scallops

Ingredients
- 1 clove garlic
- 1 Shallot
- 1 tbsp butter
- 1 tsp fresh thyme leaves
- flour
- juice of 2 oranges
- 125 ml white wine
- 2 tbsp crème fraîche
- Salt
- freshly ground pepper
- a pinch sugar
- 8 large shrimp (raw)
- 4 scallops
- 1 tbsp oil
- 40 g chopped pistachios
- grated orange zest (unprocessed)
- thyme (for garnish)

Peel and dice garlic and shallot. Heat butter. Sauté garlic, shallot, and thyme in it. Dust with flour and cook briefly. While stirring pour in orange juice and white wine and let simmer gently for 5 minutes. Strain the sauce and enrich with crème fraîche. Season with salt, pepper, and sugar.

Rinse shrimp and scallops quickly and pat dry. Heat oil. Briefly sear shrimp and scallops. Stir pistachios and orange zest into the sauce. Place shrimp and scallops in oven‑proof ramekins, pour sauce over them. Grill under preheated grill on medium rack for 2–3 minutes to gratinate. Serve garnished with pistachios, orange zest, and thyme.
