Baked Cod

Ingredients
- 450 g fresh cod fillet
- 500 ml milk
- 2 EL flour
- 2 EL butter (and butter for greasing)
- Salt
- 2 tsp paprika powder (sweet)
- 1 tsp tomato paste
- black pepper from grinder
- freshly grated nutmeg
- 4 Spring Onions
- 2 EL chives rings
- 3 EL pitted black olives

Wash and pat dry the cod fillet, optionally halve it, and season with salt and pepper. Preheat oven to 200°C. Grease a small baking dish with butter. Trim and wash the spring onions, cut into wide rings; slice olives into thin rings.

Melt butter in a saucepan, gradually whisk in flour until fully incorporated. While stirring, pour in some milk, then add the remaining milk slowly, continuing to stir. Bring to a gentle boil over medium heat. Simmer for 1 minute while stirring until the sauce thickens. Remove from heat and fold in tomato paste and paprika. Season with salt, pepper, and nutmeg.

Place the cod fillets side by side in the baking dish, sprinkle with spring onion rings and olive slices, then pour the sauce over them. Bake at high temperature for about 20 minutes until golden yellow. Sprinkle baked cod with chives rings and serve immediately with fresh baguette.
