Ingredients

  • 2 Eggplants
  • Salt
  • 250 g shortcrust pastry
  • 300 g goat cream cheese
  • Pepper
  • 1 Tbsp freshly chopped thyme
  • 1 tbsp Olive Oil
  • 3 tbsp maple syrup

Instructions

    Wash, clean, and slice the eggplants into about 1.5 cm thick rounds. Salt them and let soak in water for about 10 minutes, then pat dry.

    Preheat the oven to 200°C (400°F) with both lower and upper heat.

    Roll out the shortcrust pastry and cut four circles of roughly 15 cm diameter. Place on a baking sheet lined with parchment paper. Spread goat cream cheese over the pastry, leaving a small border. Arrange the eggplant slices on top of the cheese, season with salt and pepper, and sprinkle thyme. Drizzle with olive oil and bake in the oven for about 25 minutes until golden brown.
