Asian Green Bean Salad

A fresh green bean salad in Asian style featuring crisp vegetables and a zesty dressing from Spoonsparrow.

Ingredients

  • 250 g Keniabohne
  • 1 Salatgurke
  • 2 rote Chilischoten
  • 2 Schalotten
  • 1 Knoblauchzehe
  • 1 cm Ingwer
  • 1 EL Öl
  • 4 EL Teriyaki-Sauce
  • 0.5 Limette
  • 0.5 TL Zucker
  • 3 Stiele Koriander

Instructions

  1. 1.

    Clean the beans and blanch them in plenty of boiling salted water for 3-5 minutes until al dente, then drain and shock with ice-cold water.

    Halve some beans lengthwise. Wash the cucumber, cut into thirds, then slice into thin sticks. Mince the chilies. Peel the shallots and slice into fine rings. Peel the garlic and crush it. Peel the ginger and grate finely.

    Sauté the ginger, garlic, and minced chilies in oil until translucent, then deglaze with Teriyaki sauce.

    Squeeze the lime, add its juice to the pan, heat briefly, then stir in sugar and shallot rings.

    Combine the beans and cucumber on a plate, sprinkle chopped coriander over them, drizzle the dressing, and serve immediately.
