Fruity Fennel Salad

Fruitful fennel salad is a wonderful appetizer or side dish. The Spoonsparrow recipe can be prepared in an instant.

Ingredients

  • 500 g fennel
  • 2 oranges
  • 1 tbsp honey
  • 2 tbsp white balsamic vinegar
  • Salt
  • 100 g currants
  • 2 tbsp herb oil

Instructions

    Wash the fennel, halve it, trim the core if necessary, and slice or julienne the halves into thin strips. Set aside some fennel fronds for garnish. Peel the oranges thoroughly and cut out the segments. Squeeze the remaining pulp and mix the juice with honey and balsamic vinegar; season with salt. Toss the fennel in the dressing and let it rest for about 15 minutes.

    Taste before serving, drain well, and arrange on plates. Garnish with orange segments and fennel fronds. Rinse the currants, pat dry, and scatter them over the salad. Serve the fruity fennel salad drizzled with herb oil.
