Ingredients

  • 200 g Flour
  • 50 g rice flour
  • 1 pinch salt
  • 160 g softened butter
  • 100 g sugar
  • 1 tsp organic lemon zest
  • powdered sugar (for dusting)

Instructions

    Mix the two flours with the salt. Cream together the butter, sugar and lemon zest, sift the flour over it and gradually fold in until a smooth dough forms. Knead into a ball, wrap in cling film and refrigerate for about 30 minutes.

    Preheat the oven to 180°C (350°F) fan‑fry or conventional heat.

    Line a springform pan with parchment paper, roll out the dough on a floured surface to fit the pan and place it inside.

    Bake in the preheated oven for about 25 minutes. Remove, cut into pieces while still warm and generously dust with powdered sugar.
