Shortbread

Ingredients
- 250 g soft butter
- 125 g sugar
- 1 pinch salt
- 275 g flour
- 100 g rice flour
- flour (for working)
- sugar (for dusting)
Instructions

Beat the butter with the sugar and salt in a bowl until fluffy. Add sifted flour and rice flour, then knead into a smooth dough on a floured work surface. Roll out to about 1 cm thickness and cut into shortbread fingers (approximately 2x10 cm). Prick each piece several times with a fork, dust with sugar, and place on a baking sheet lined with parchment paper. Chill for about 30 minutes.

Preheat the oven to 200°C (400°F) with both fan and top heating.

Bake the shortbread in the oven for 15-20 minutes until golden yellow. Carefully remove from the tray and cool on a wire rack.

Wrap in paper into small packages if desired and give as gifts.
