Ingredients

  • 2 Grapefruits
  • 1 tsp Honey
  • 4 tbsp avocado oil
  • Salt
  • Pepper (freshly ground)
  • 4 salmon fillets (about 180 g each)
  • 80 g sesame seeds (white and black)
  • 2 tbsp olive oil
  • 2 stalks celery
  • 2 Avocados
  • sprouts
  • pansy flower for garnish

Instructions

    Peel the grapefruits thoroughly and cut out the segments, catching the juice. Squeeze the remaining pulp to extract more juice. Mix the juice with honey and avocado oil, season with salt and pepper.

    Rinse the salmon fillets, pat dry, and season with salt and pepper. Toss them in sesame seeds and sear in hot olive oil in a non‑stick pan for 5–6 minutes on each side until golden brown.

    Wash, trim, and thinly slice the celery. Peel, halve, pit, and cube the avocados. Arrange the grapefruit segments and celery slices on plates, top with salmon fillets, and drizzle with the dressing.

    Serve garnished with sprouts and pansy petals as desired.
