Semolina Pudding with Strawberries

Ingredients

  • 400 g Strawberries
  • 20 g Ginger
  • 2 tbsp acacia honey
  • 2 tbsp lemon juice
  • 1 l milk (1.5% fat)
  • 2 tsp Turmeric powder
  • 40 g whole grain sugar
  • 100 g wheat whole-grain semolina
  • 1 egg
  • 2 tbsp butter

Instructions

    Clean, wash and cut the strawberries into pieces. Peel and finely grate the ginger. Mix ginger with acacia honey and lemon juice, fold in the strawberries and let rest for at least 15 minutes.

    Meanwhile heat the milk with turmeric and sugar until it boils. Sprinkle in the semolina and stir constantly over low heat for about 5 minutes until it thickens. Remove from heat and cool for 3 minutes.

    Separate the egg. Whip the egg white to stiff peaks. Stir the yolk with butter into the semolina pudding, then fold in the whipped egg whites. Divide the mixture into serving cups and chill for 5 minutes. Top with strawberries and serve immediately.
