Irish soda bread: The wheat whole‑grain flour gives the loaf a hearty flavor. One slice provides plenty of fiber and a quarter of the daily vitamin requirement.

Ingredients

  • 425 g wheat flour type 1050
  • 2 tsp Baking soda
  • 1 packet baking powder
  • 15 g fine sea salt
  • 375 g whole‑grain wheat flour
  • 625 ml buttermilk
  • 1 large egg

Instructions

  1. 1.

Sift the wheat flour type 1050, baking soda, baking powder and salt into a bowl and mix with the whole‑grain flour.

  2. 2.

Add the buttermilk and egg to the bowl and stir with the other ingredients.

  3. 3.

Transfer the dough onto a floured work surface and knead for about 5 minutes until smooth and elastic.

  4. 4.

Shape the dough into a round loaf, place it on a baking sheet lined with parchment paper, and bake in a preheated oven at 200 °C (180 °C fan‑forced, gas mark 3) on the second rack from the bottom for 40–45 minutes.

  5. 5.

Let the soda bread cool completely on an oven rack or cooling grate before slicing.
