Ingredients

  • 8 eggs
  • 4 tbsp heavy cream
  • butter (for frying)
  • 2 carrots
  • 200 g peas
  • 100 g watercress
  • Salt
  • Pepper (freshly ground)
  • cilantro leaves (for garnish)

Instructions

    Beat the eggs in a bowl, season with salt and pepper, then fold in the cream. Cook portions of 4 omelettes in hot butter.

    For the filling, peel and grate the carrots, then sauté them with the peas in 1 tbsp hot butter for 1-2 minutes. Fill the omelettes with this mixture and sprinkle with sprouts. Serve garnished with cilantro.
