The Seitan basic recipe from Spoonsparrow is perfect for anyone who wants to prepare the vegan gluten-based meat substitute.

Ingredients

  • 200 g Gluten (-powder)
  • 0.5 TL dried thyme
  • 1 TL Miso (broth)
  • 4 EL soy sauce
  • 1 EL tomato paste (15 g)
  • 1 onion
  • 3 Garlic cloves
  • 1 bay leaf
  • 0.5 TL salt

Instructions

    Mix gluten powder with thyme and miso broth in a bowl.

    Add 2 EL soy sauce and tomato paste to 200 ml water, stir, pour over the gluten mixture and mix.

  3. 3.

    Process everything into a smooth dough. Divide the dough into two pieces, shape into balls and set aside briefly.

    While the dough rests, peel onion and garlic. Quarter the onion, halve the cloves. Bring about 1.2 l of water to a boil in a pot. Add onion and garlic pieces, remaining soy sauce and bay leaf, season with salt.

    Cook the balls in the broth over low heat for 30 minutes. Remove from the liquid and let cool.
