Ingredients
- 8 Seezungen fillets
- 300 g wild rice blend
- 2 shallots
- 25 g butter
- 0.25 l fish stock
- 1 cup heavy cream
- 1 bundle chervil
- Salt
- asparagus (ground pepper)
- Cayenne pepper
- 1 lemon (freshly squeezed juice)

Cook the wild rice mixture according to the package instructions.

For the sauce, peel and finely chop the shallots and sauté them in butter. Deglaze with fish stock, add cream, and reduce to half. Wash and chop chervil, set aside 2 tbsp, puree the rest with the sauce, season with salt and cayenne pepper.

Season the fillets with salt and pepper, drizzle with lemon juice, and rub with chopped chervil. Roll up the fillets and steam over hot water vapor for 6-8 minutes.
