Ingredients

  • 4 sea bass fillets (250 g each)
  • 1 tbsp Lemon Juice
  • 2 tbsp flour
  • 2 tbsp clarified butter
  • 1 onion
  • 2 Garlic cloves
  • 2 Zucchini
  • 8 meaty tomatoes
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • 50 ml Vegetable broth
  • 4 sprigs coriander

    Drizzle the sea bass fillets with lemon juice and dust them with flour. Sear in a hot grill pan or on a preheated grill using clarified butter until golden brown on both sides.

    Peel the onion and garlic, then dice finely. Wash the zucchini and slice into rounds with a mandoline. Peel, core, and cube the tomatoes. Heat olive oil in a skillet and sauté the vegetables until softened. Add vegetable broth, simmer for 3 minutes, season with salt and pepper.
