Ingredients
- 4 Seezungenfilets (ca. 180 g each)
- 4 EL capers
- 2 lemons
- 2 shallots (finely diced)
- 4 dill sprigs
- flour (for coating)
- 4 EL oil
- 350 g butter
- 200 ml white wine
- Salt
- Pepper (freshly ground)
Instructions

Drain the capers in a sieve.

Peel the lemons (including the white membranes) and slice into rounds.

Remove the tips from the dill sprigs.

Wash the fish, pat dry, season with salt and pepper. Coat in flour and fry in hot oil for about 2-3 minutes on each side until golden brown. Add 2 EL butter at the end.

Reduce the white wine in a saucepan to about one quarter. Stir in the remaining cold diced butter until the sauce thickens; do not let it boil further. Add capers, lemon slices and dill sprigs. Season with salt and pepper.

Serve the fish with the sauce and optional potatoes.
