Ingredients

  • 400 g spaghetti
  • Salt
  • 250 g cocktail tomatoes
  • 1 red chili pepper
  • 250 g jumbo shrimp (prepped and deveined)
  • 200 g squid tubes (prepped)
  • 450 g mussels (e.g., littleneck)
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 120 ml dry white wine
  • 100 ml fish stock
  • pepper (ground)
  • a handful fresh basil

Instructions

    Cook the pasta in plenty of boiling salted water until al dente. Wash and halve the tomatoes. Rinse, slit lengthwise, deseed and finely chop the chili pepper.

    Rinse the shrimp and squid; pat dry. With a sharp knife, score the squid flesh diagonally several times and cut into pieces. Clean the mussels. Peel and finely mince the garlic cloves. In a pot, briefly sauté the chili in 2 tbsp hot oil. Deglaze with wine and stock, add mussels, cover and steam for 3-4 minutes until all mussels open; discard any that remain closed. Remove the lid and reduce the broth over high heat. Lower the temperature, add tomatoes, shrimp and squid, season with salt and pepper, and simmer for 2-3 minutes.

    Drain the pasta and drizzle with olive oil. Taste and adjust seasoning, then serve on plates garnished with fresh basil leaves.
