Seafood Soup with Tofu

Ingredients
- 1 onion
- 2 tbsp soy oil
- 2 tbsp Gochujang (chili paste) as desired for heat
- 1 Zucchini
- 200 g kimchi (canned or jarred)
- 1 l fish stock (or vegetable broth)
- Salt
- 1 tbsp soy sauce
- 400 g mixed seafood (frozen)
- 500 g medium-firm tofu (Asian, firm tofu)
Instructions

Peel and dice the onion. In a pot, sauté in hot oil until translucent. Stir in Gochujang and cook briefly. Wash, trim, and dice the zucchini; add to the pot.

Sauté kimchi briefly, then pour in the broth. Bring to a boil and season with salt and soy sauce. Add the seafood and simmer for about 5 minutes.

Dice the tofu, heat it in the soup until warm, taste, and serve.
