Seafood Salad with Orange Dressing

Ingredients
- 1 small leek stalk
- 1 red bell pepper
- 1 small chili pepper
- juice of 1 organic orange
- 5 tbsp olive oil
- 300 g shrimp (cooked, peeled)
- 300 g calamari (pre‑prepared)
- 1 finely chopped garlic clove
- juice of 1 lemon
- 2 finely chopped herbs (e.g., dill, tarragon, chives)

Remove the roots and green end from the leek stalk. Cut into 5 cm pieces, then slice into fine strips. Blanch in boiling salted water for 2 minutes, shock in cold water, drain.

Wash, trim, halve, deseed, remove white membranes from the bell pepper, and cut into strips.

Finely chop the chili pepper. Mix all prepared ingredients with orange juice and 3 tbsp olive oil. Combine shrimp and calamari rings. Heat remaining olive oil in a pan with garlic and quickly sauté the seafood. Season with salt, drizzle lemon juice, sprinkle herbs, let cool slightly. Toss with remaining salad components. Cover, refrigerate for about 1 hour.
