Cold Yogurt Salad with Herbs

Ingredients
- 1 cucumber
- 30 g mixed herbs (e.g., chervil, parsley, dill)
- 1 packet watercress
- 500 g yogurt (1.5% fat)
- 250 ml vegetable broth
- 2 Garlic cloves
- 1 tbsp grape seed oil
- 1 untreated lemon
- Salt
- Cayenne pepper

Peel the cucumber, halve it, remove seeds and cut into large cubes. Wash the mixed herbs, shake dry, pick off leaves (reserve some chervil for garnish), then combine with sliced watercress and cucumber in a blender. Add yogurt, broth, peeled garlic, and oil; blend until smooth.

Grate some lemon zest and squeeze juice. Season the soup with zest, juice, salt, and cayenne pepper. Chill for at least 30 minutes, taste before serving, and garnish with chervil.
