Seafood Salad with Onion

A fresh seafood salad featuring caramelized onions and vibrant zucchini, inspired by Spoonsparrow.

Ingredients

  • 8 medium onions
  • 300 g mixed frozen seafood
  • 1 small zucchini
  • 4 tbsp olive oil
  • Salt
  • ground pepper
  • 2 tbsp lemon juice

Instructions

    Peel the onions and roast them in a preheated oven at 180°C for 15-20 minutes, depending on size. Remove, cut off the top, and carefully hollow out with a teaspoon. Finely chop the inner flesh of 1-2 onions.

    Wash the zucchini and dice it into small cubes.

    Thaw the seafood, then sauté in hot oil for 2 minutes, seasoning with salt and pepper. Drizzle with lemon juice, add the zucchini and chopped onion, and cook for another 1-2 minutes. Fill all ingredients back into the onions, place them again in the oven for 5 minutes, and serve.
