Seafood Salad

Ingredients
- 2 small red onions
- 3 Garlic cloves
- 1 red chili pepper
- 2 Spring Onions
- 3 tbsp Fish sauce
- 3 tbsp Lime juice
- 1 tsp sugar
- 1 tsp sesame seeds
- 500 g small squid (prepped for cooking)
- 1 large papaya
- light yellow savoy cabbage leaves (optional)

Peel the onions and slice into thin rings. Peel the garlic and finely chop it. Wash, trim, and slice the chili pepper into rings. Wash, trim, and cut the spring onions into about 1 cm rings.

Whisk together fish sauce, lime juice, sesame seeds, and sugar.

Rinse the squid under running water, then quarter the tubes. Cut each piece crosswise into thin slices. Bring a pot of water to a boil. Blanch all squid pieces for about 1 minute (boiling vigorously), immediately drain and let them dry. Add the warm squid pieces to the sauce and mix thoroughly.

Peel the papaya, halve it, remove seeds, and cut into thin strips.

For serving arrange squid and papaya on savoy cabbage leaves on a platter as desired and sprinkle with onion, spring onion, and chili rings.
