Ingredients

  • 350 g strudel dough approx 40x40 cm (8 sheets)
  • brown butter (for brushing)
  • 1 onion
  • 1 tbsp butter
  • 350 g layered cheese (10% fat)
  • 50 g grated cheese (e.g., Bergkäse)
  • 2 egg yolks
  • 2 tbsp freshly chopped parsley
  • Salt
  • pepper (ground)
  • 250 g endive salad
  • 2 handfuls lamb's lettuce
  • 60 g bacon strips
  • chives rings (for garnish)

Instructions

    Spread the strudel dough and brush four sheets with a little butter. Place the remaining four sheets on top. For the filling, peel and finely dice the onion. Sauté in hot butter until translucent, then remove from heat. Mix in the layered cheese, grated cheese, egg yolks, and parsley. Season with salt and pepper.

    Cut the dough into three equal strips each. Spoon the filling onto the lower third of each strip. Fold the ends over to form a packet.

    Line a steamer basket with parchment paper and brush with brown butter. Place the packets seam side down in the basket or steamer, and steam for about 20 minutes.

    Wash, trim, and roughly chop the endive salad. Fry the bacon in a bit of brown butter until crisp, then add the salad and let it wilt together. Season with salt and pepper, and serve on plates. Place the packets on top and drizzle with some brown butter.
