Ingredients

  • 600 g radishes
  • Salt
  • 8 spring onions
  • 4 hard‑boiled eggs
  • 4 tbsp apple cider vinegar
  • 4 Tbsp sunflower oil
  • pinch sugar
  • Pepper
  • 4 tbsp chive rolls

Instructions

    Peel, wash, and drain the radishes. Slice them thinly or dice into fine pieces. Sprinkle with salt and let sit for about 10 minutes to draw out water, then pat dry.

    Wash and trim the spring onions, slicing them into thin rings. Peel the eggs and quarter them.

    Whisk together the vinegar and oil, seasoning with sugar, salt, and pepper to taste.

    Combine the radishes and spring onion rings in a bowl, adding half of the dressing. Transfer to plates, top with egg quarters, and sprinkle the remaining chives before serving.
