Seafood Pasta

Ingredients
- 4 tomatoes
- 150 g fresh Venus mussels
- 150 g fresh baby mussels
- 300 g shrimp
- 0.125 l white wine
- 1 onion
- 2 Garlic cloves
- 300 g spaghetti
- 2 tbsp olive oil
- 0.5 bunch parsley (chopped)
- Salt
- Pepper
Instructions

Heat tomatoes briefly, shock in cold water, peel, quarter, remove seeds and roughly chop the flesh.

Brush mussels under running water, discard those that remain closed. Add mussels with wine to a pot and simmer covered on low heat for 8 minutes until shells open.

Peel and finely dice onion and garlic. Heat oil in a pan, add shrimp, onions, and garlic and sauté; deglaze with mussel stock. Add tomatoes and let sauce simmer for 10 minutes. Cook spaghetti in plenty of salted water.

Season the sauce with salt and pepper, wash parsley, set aside a few leaves, finely chop the rest and stir in. Add mussels to the sauce, reheat covered briefly. Drain pasta and immediately mix with sauce, sprinkle with parsley before serving.
