Ingredients
- 1 small mild red chili pepper
- 1 Garlic clove
- 2 Handfuls Basil
- 50 ml Vegetable broth
- 4 tbsp olive oil
- Salt
- Pepper
- 6 sea scallops (cleaned)
- 1 Shallot
- 80 g crème fraîche
- 2 tbsp heavy cream
- Salt
- Pepper
- a splash lemon juice

Wash, trim, and halve the chili lengthwise; remove seeds and membranes and finely dice the flesh. Peel the garlic. Rinse the basil, shake dry, and pluck leaves. Blend basil with garlic and broth in a blender. Add the chili and stir in olive oil. Season with salt and pepper.

Wash scallops, pat dry, and cube them. Peel and finely chop the shallot. Mix both with crème fraîche and heavy cream. Season with salt, pepper, and lemon juice; divide into small glasses. Spoon the herb sauce over each serving and chill until ready to serve.
