Sea Scallops with Curry Butter and Pineapple

Ingredients
- 12 sea scallops
- 200 g fresh pineapple, finely diced
- 2 tsp Curry powder
- 2 tbsp butter
- 200 ml fish stock
- 2 tbsp white wine
- Salt
- freshly ground pepper
- 1 tbsp chives curls

Preheat the oven to 80°C.

Remove the scallops from their shells, wash and clean them. Also clean the shells well for later plating.

Sear the scallop meat in 1 tbsp hot butter until golden brown on both sides, then remove. Place in the preheated oven on the middle rack for about 10 minutes to steam through.

Meanwhile, in the same skillet, sauté the pineapple pieces, add curry powder and deglaze with white wine and fish stock. Simmer over low heat for about 5 minutes. Season with salt and pepper, then stir in 1 tbsp cold butter to thicken the sauce.

Fill the scallop shells with the sauce and place the scallops on top.

Serve garnished with chives curls.
