Ingredients
- 0.5 Vanilla bean
- 2 oranges
- 0.125 l vegetable broth
- 1 Carrot
- rock salt
- white pepper (freshly ground)
- 1 tsp cinnamon
- 2 tsp butter
- 6 scallops (ready to cook)
- chickpea flour
- 1 tbsp ghee

Slice the vanilla bean and scrape out the seeds. Juice one orange, peel and fillet the other thoroughly. Bring juice, fillets, broth and vanilla seeds to a boil. Peel and grate the carrot finely into the sauce. Reduce to one third, season with salt, pepper and cinnamon. Remove from heat and stir in cold butter.

Wash scallops, pat dry and coat with chickpea flour. In hot ghee brown both sides for about 2 minutes each. Arrange scallops on the sauce and serve.
