Ingredients
- 1 sea bream (ca. 700 g, ready to cook)
- 200 g firm potatoes
- Salt
- freshly ground pepper
- 50 g butter
- 2 tbsp plant oil
- fresh thyme

Preheat the oven to 200°C.

Wash, peel and cut the potatoes into very thin slices or ridges. Blanch in boiling salted water for 3 minutes, drain and cool.

Rinse the fish and pat dry. Stuff the cavity with a sprig of thyme and season generously with salt and pepper; sprinkle with thyme leaves and arrange the potato ridges over the fish like scales. Heat some butter and brush the potato ridges with it.

Grease an ovenproof dish with butter, place the fish inside and bake in the oven for about 20 minutes until the potato slices are golden brown.
