Sea Bream and Potatoes from the Oven

Ingredients
- 700 g firm boiling potatoes
- 150 g onions
- 2 red chili peppers
- 4 Garlic cloves
- Salt
- freshly ground pepper
- 4 sprigs Rosemary
- 4 bay leaves
- 100 ml olive oil
- 100 ml White wine
- Sea salt
- rosemary (for garnish)

Peel the potatoes, slice them thin with a paring knife and place in cold water. Halve the onions and cut them lengthwise into thin slices. Finely chop the garlic. Slice the chili peppers into fine rings. Season the sea bream inside and out with salt and pepper and stuff it with rosemary. Drain the potatoes in a sieve. Arrange the potatoes, sea bream and bay leaves on a baking tray.

Mix oil, wine, onions, garlic and chili, season lightly with salt and pepper. Spread the mixture over the potatoes and sea bream. Bake in a preheated oven on the second rack from below at 200°C (gas 3, convection not recommended) for 15 minutes. Remove the sea bream, sprinkle with sea salt and garnish with rosemary.
