Sea Bream with Lemon Herb Crumbs

- 4 sea bream (about 300 g each)
- Salt
- Pepper (freshly ground)
- 2 untreated lemons
- 1 bunch parsley (about 60 g)
- 75 g breadcrumbs
- 100 ml olive oil
- 6 fresh garlic cloves

Preheat the oven to 200°C with fan and top heating.

Wash the fish, pat dry, and season inside with salt and pepper. Add half of the parsley stems, then make diagonal slashes in each sea bream. Slice the lemons lengthwise, squeeze out half, and cut the rest into slices. Insert these slices into the cuts. Strip the remaining parsley leaves and finely chop them. Mix the breadcrumbs, lemon juice, and olive oil together. Halve the garlic cloves, add them to the herb-breadcrumb mixture, and distribute everything over the fish. Season with salt and pepper and bake in the oven for about 30 minutes, occasionally drizzling with the extracted juice.
