Sea Bream with Garlic, Lemon and Herbs

Ingredients

  • 2000 g small sea bream (4 small fish; ready to cook)
  • Sea salt
  • black pepper
  • 0.5 stalk leeks
  • 4 sprigs Rosemary
  • 8 sprigs thyme
  • 2 Organic lemons
  • 3 tbsp olive oil
  • 2 Garlic cloves

Instructions

    Rinse the fish under cold water, pat dry and rub inside and out with salt and pepper.

    Wash, dry, trim and halve the leeks lengthwise. Blanch each of 8 leek strips for about 30 seconds in boiling salted water, remove, shock in cold water.

    Wash herbs, shake off dirt and pluck leaves. Rinse lemons hot, pat dry and slice thinly.

    Stuff fish with half the herbs and lemon slices, top remaining herbs and lemon slices on the fish, wrap with leek ribbons and seal. Drizzle fish with oil, place in grill tongs on a hot grill and grill 15–20 minutes turning occasionally.

    Meanwhile, halve garlic cloves crosswise and grill with cut side down for 10 minutes. Then arrange everything decoratively on four plates.
