Ingredients
- 880 g mackerel (4 fillets), ready to cook
- 0.125 l white wine (or vegetable broth)
- 1 chili pepper
- 2 rosemary sprigs
- 4 thyme sprigs
- 4 fresh bay leaves
- 4 Garlic cloves
- 1 Red Onion
- 1 untreated lemon
- olive oil
- 6 juniper berries
- Sea salt
- freshly ground pepper
Instructions

Slice the chili pepper into thin rings. Chop the rosemary and thyme. Peel the garlic and slice it thinly. Peel the onion and cut it into rings. Slice the lemon thinly as well. Combine all with bay leaves, white wine, juniper berries, and about 8 tbsp olive oil. Wash the fish and pat dry. Score the skin side lightly and place in the mixture. Cover and marinate overnight in the refrigerator.

Remove from the marinade, season inside and out with salt and pepper, and grill on fish grill grids for about 10 minutes per side. Occasionally brush with the remaining marinade.
