Ingredients

  • 3 large tomatoes
  • 2 shallots
  • 1 tbsp freshly chopped parsley
  • 5 tbsp olive oil
  • 1 tsp lemon juice
  • Salt
  • pepper (from grinder)
  • 960 g sea bass fillets with skin (8 fillets)
  • 1 thyme sprig
  • 1 Garlic clove
  • lemon slice (for garnish)

Instructions

    Wash the tomatoes for the salsa, remove stems and dice finely. Peel the shallots and dice very finely as well. Mix both with parsley, 3-4 tbsp olive oil and lemon juice, seasoning with salt and pepper.

    Rinse the sea bass, pat dry and season with salt and pepper. In a hot non-stick pan, cook skin side down in the remaining oil for 4-5 minutes until golden brown. Add thyme and garlic cloves to aromatize. Flip the fish and cook for another 1-2 minutes. Plate the fish on four bowls with tomato salsa and garnish with lemon slices.
