Trout Gratin with Tomatoes

Ingredients

  • butter (for the dish)
  • 500 g trout fillet with skin (optional)
  • Salad
  • Pepper (freshly ground)
  • 3 tbsp Lemon juice
  • 3 eggs
  • 150 ml whipping cream
  • 150 ml sour cream
  • 4 sprigs Parsley
  • 4 sprigs dill
  • 80 g smoked trout fillet
  • 100 g cocktail tomatoes
  • parsley (for garnish)

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. Butter the baking dish.

    Wash, pat dry, and remove any bones from the trout fillets if present. Season with salt, pepper, and 1 tbsp lemon juice, then place in the dish. Whisk the eggs with cream and sour cream, season with salt, pepper, and lemon juice, and pour over the fish. Bake in the middle of the oven for 25-30 minutes.

    Meanwhile, wash and dry parsley and dill, then finely chop. Break the smoked trout into small pieces with a fork and mix with the herbs. Wash and halve the tomatoes. Distribute both over the finished gratin and garnish with parsley leaves. Serve immediately.
