Ingredients
- 4 pieces sea bass fillet (about 160 g)
- Lemon juice
- Salt
- Pepper (freshly ground)
- a pinch saffron strands
- 6 tbsp Olive oil
- 1 red bell pepper
- black, pitted olives
- 2 tbsp chopped parsley
- 2 tbsp white wine vinegar
Instructions

Wash and pat dry the fish fillets, then season with salt and pepper.

Blend vinegar, parsley, and 4 tbsp oil until smooth; season with salt and pepper.

Clean the pepper, halve it, remove seeds, discard white membranes, and cut into diamond shapes. Halve olives to match the number of diamonds.

Sear the fillets in remaining hot oil for about 2–3 minutes per side.

To serve, arrange sea bass fillets on a plate, drizzle with saffron, garnish with pepper diamonds and an olive half each, and spoon green sauce over.
