Ingredients
- 400 g tagliatelle
- 250 g ricotta
- 4 EL finely chopped herbs (mixed colors)
- 2 EL Parmesan (freshly grated)
- Salt
- Pepper (freshly ground)
- Olive oil (extra virgin)
- basil (for garnish)
Instructions

Cook the Tagliatelle in plenty of salted water until al dente, drain and reserve 1 cup of cooking water.

Whisk the Ricotta with 4-5 EL of reserved cooking water, herbs, 2 EL olive oil, salt, pepper and Parmesan. Add more cooking water if needed.

Distribute the Tagliatelle on plates, pour the sauce over it, garnish with basil leaves, and serve immediately.
