Ingredients
- 400 g spaghetti
- 1 Garlic clove
- 1 tsp butter
- 200 ml heavy cream
- 100 ml vegetable broth (or poultry broth)
- 1 tbsp Crème fraîche
- 4 tbsp finely chopped mixed herbs as desired (e.g., wild garlic, parsley, basil etc.)
- nutmeg (freshly ground)
- Salt
- pepper (from the mill)
- wild garlic flower (for garnish)
Instructions

Cook spaghetti according to package instructions in plenty of salted water until al dente.

Peel and finely chop garlic. Sauté in butter until translucent, then deglaze with a splash of white wine. Reduce, add cream and broth, simmer until reduced by half. Stir in chopped herbs and crème fraiche, season with salt, pepper and nutmeg.
