Ingredients

  • 4 sea bass fillets
  • 2 tbsp lemon juice
  • Salt
  • Pepper
  • 2 tbsp breadcrumbs
  • 3 Tbsp liquid butter
  • 3 tbsp finely diced vegetables (e.g., carrot, celery, leek, bell pepper)
  • 1 tsp finely chopped herbs
  • 2 tbsp oil
  • vegetable julienne for garnish
  • 400 g spinach leaves
  • 1 tbsp grape seed oil
  • 1 tbsp balsamic cream

Instructions

    Sauté the vegetable cubes in butter, mix in breadcrumbs and herbs, season with salt and pepper, set aside. Drizzle lemon juice over the fish fillets and let sit. Rinse the spinach, wash thoroughly, and drain well. Pat the fish dry, then quickly sear both sides in hot oil; remove and place in a heat‑proof dish or on parchment paper.

    Cover with the vegetable–breadcrumb mixture and gratinate under a preheated grill for 2-3 minutes. Let the spinach wilt slightly in the pan, season, and spread onto warmed plates. Arrange the fish atop the spinach, top with vegetable julienne, drizzle grape seed oil and balsamic cream around the fish.
