Scrambled Egg Crab Sandwich

Ingredients

  • 8 eggs
  • 50 ml heavy cream
  • Salt
  • 1 pinch paprika powder (sweet)
  • 50 g butter
  • 150 g North Sea crabs
  • 4 slices multigrain bread
  • 2 tbsp chives

Instructions

    Whisk the eggs with the cream, a little salt and paprika. Heat 20 g of butter in a pan. Rinse and drain the crabs, then fry them in the butter for 2–3 minutes until translucent. Remove and pour the egg mixture into the pan, stirring occasionally until it thickens.

    Meanwhile cut each slice of bread diagonally and lightly spread with the remaining butter. Spoon the scrambled eggs with crabs onto the bread and sprinkle with chives before serving.
