- 2 large ripe pears
- 2 tbsp lemon juice
- 4 pork schnitzels (about 140 g each)
- Salt
- Pepper (freshly ground)
- 2 tbsp flour
- 20 g clarified butter
- 250 g Camembert
- 2 tbsp butter
- 50 ml dry white wine
- 4 tbsp lingonberries (jarred)
- 1 bunch curly parsley
- vegetable oil (for frying)

Preheat the oven to 180°C (350°F).

Wash, peel, quarter the pears, remove the core, slice into rounds and drizzle with lemon juice. Pat schnitzels dry, lightly pound if desired, season with salt and pepper, coat in flour, then fry in hot clarified butter for a total of 3-4 minutes on both sides.

Slice the Camembert. Place the schnitzels in a heat‑proof dish, top first with pear slices, then with Camembert, dot with butter pieces, and pour over white wine. Distribute lingonberries on top and bake in the preheated oven for 10-15 minutes until golden.

Meanwhile, fry parsley tips in hot oil in batches for 10-20 seconds until crisp. Drain on paper towel.

Plate the schnitzels with sauce and garnish with fried parsley before serving.
