Fried Chinese Dumplings with Shrimp Filling

- 200 g Flour
- 1 tsp rice vinegar
- 1 tsp peanut oil
- 200 g chopped shrimp
- 4 spring onions (cut into rings)
- 0.5 tsp ginger (fresh grated)
- 1 tsp Sesame oil
- Salt
- a pinch of sugar
- oil (for the basket)
- 300 g white cabbage
- Salt
- 1 red bell pepper

Make a smooth, silky dough from flour, vinegar, oil and about 150 ml water. Roll it thinly and cut out circles 8–10 cm in diameter. Mix shrimp, spring onions, ginger, sesame oil, sugar and salt well. Place the filling in the center of each circle. Fold each circle over, alternating the seam side into folds to create a zig‑zag seam. Place in an oiled bamboo basket and steam for about 8 minutes.

Wash, trim and slice the white cabbage finely. Blanch in salted water for 3–4 minutes. Wash, halve and trim the bell pepper, then slice finely as well. Arrange the cabbage and dumplings on a plate. Serve with chili dip if desired.
