Ingredients
- 8 slices pork schnitzel (about 80 g each)
- 8 slices Parma ham
- 8 sage leaves
- 3 tbsp butter
- 125 ml sweet wine (e.g., Marsala)
- Salt
- Pepper (freshly ground)
- sage leaf for garnish

Gently flatten the schnitzels with the flat side of a meat mallet. Place one sage leaf on each schnitzel and wrap it with a slice of ham, securing with a toothpick if needed. Melt 2 tbsp butter in a pan. Add the schnitzels and sear for 1-2 minutes per side. Lightly season with salt and pepper, then remove.

Deglaze the pan with Marsala wine, bringing to a vigorous boil. Whisk in 1 tbsp butter into the sauce. Taste and return the schnitzels briefly to the pan to heat through.
