Ingredients
- 12 equal-sized oyster mushrooms
- 12 sage leaves
- 6 slices Parma ham
- Pepper (freshly ground)
- 1 tsp butter
- 1 tbsp Olive Oil
- 2 tbsp balsamic vinegar

Clean the oyster mushrooms. Cut the ham crosswise in half. Sprinkle pepper on the gill side of each mushroom. Place one slice of ham and one sage leaf on top, securing with toothpicks. Heat butter and oil in a large pan.

Sear the mushrooms first with the sage-ham side for about 3 minutes. Flip and cook the other side for another 3 minutes. Drizzle with balsamic vinegar and plate.
