Schmandwaffeln mit Kirschsauce

Ingredients

  • 500 g fresh ripe cherries
  • 200 ml gooseberry juice
  • 2 tbsp acacia honey
  • 1 tsp freshly grated ginger
  • 1 vanilla bean (pulp)
  • 3 g psyllium husk powder
  • 50 g dark chocolate (85% cocoa content)
  • 4 eggs
  • 1 pinch salt
  • 250 g flour
  • 0.5 tsp cinnamon
  • 80 ml whipping cream
  • 200 g Sour Cream
  • 3 tbsp sugar
  • 1 tsp Baking powder
  • butter for the waffle iron
  • powdered sugar for dusting

Instructions

    Wash, halve and pit the cherries. In a pot heat the juice with an equal amount of water, add honey, ginger, vanilla bean and pulp. Stir in psyllium husk powder, bring to a boil and simmer 3-4 minutes while stirring occasionally. Remove from heat, add chocolate, let melt, stir in cherries and cool.

    Separate the eggs for the waffles. Beat egg whites with salt into stiff peaks. Mix yolks with flour, cinnamon, cream, sour cream, sugar and baking powder; rest 20 minutes. Fold in the meringue. Pour 2-3 tbsp of batter into a hot greased waffle iron and bake golden yellow waffles one at a time. Serve topped with cherries and dusted with powdered sugar.
