Scallops with Radish Salad

Ingredients
- 1 head of celery root
- Salt
- 200 ml vegetable broth
- 2 tbsp butter
- nutmeg
- 400 g radish (red and white)
- 4 tbsp plant oil
- Lemon juice
- 16 scallops (pre‑cooked)
- ground pepper
Instructions

Peel, dice the celery root and steam it with a pinch of salt in the broth for about 15 minutes until tender. Use a potato masher to mash it coarsely; add more broth if needed so the purée isn’t too liquid. Stir in butter and season with salt and nutmeg.

Peel the radish and shave into thin slices. Sprinkle with salt and let sit for about 10 minutes to draw out water. Pat dry, then toss with 2 tbsp oil and lemon juice. Rinse the scallops, pat dry, season with salt and pepper, and sear in the remaining oil for 1–2 minutes on each side until golden brown. Plate the scallops atop the celery root purée and radish salad.
